Asked Questions
Everything you need to know about our estate-grown EVOO, shipping and orders.
Extra virgin olive oil
Extra virgin olive oil is the natural juice of the olive, obtained solely through mechanical processes, with no refining or chemical treatment.
To be classed as extra virgin it must meet strict quality criteria: acidity below 0.8% and a complete absence of flavour defects. EVOO retains the natural aromas, antioxidants and health properties of the fresh olive.
The difference lies in the quality of the oil and its sensory parameters. Extra virgin is the highest category: it has no sensory defects and its acidity is below 0.8%.
Virgin olive oil is also obtained through mechanical processes, but it may show small defects in aroma or flavour. That is why EVOO is the oil of choice in Mediterranean cuisine.
Acidity indicates the amount of free fatty acids in the oil. The lower the acidity, the better the condition of the olives and the production process.
Our EVOO has an acidity of 0.12% — far below the permitted maximum — a sign of an oil of exceptional freshness and quality.
An early harvest oil is made from olives picked at the start of the season, when the fruit is still green and at its optimal point of ripeness.
This type of oil has greater aromatic intensity, a higher concentration of antioxidants and fresher, more complex flavours. It is the oil we make at Finca Hostalets, hand-picked in our own olive groves at exactly the right moment.
The price depends on the quality of the olive, the timing of the harvest, the production yield and the production process.
Estate-grown oils with verifiable origin are made in small quantities, with greater care at every stage. In our case, each harvest is limited to 998 numbered bottles, made exclusively with olives from our own estate. Full traceability from grove to bottle.
Flavour and tasting
Arbequina is one of the most prized varieties in Mediterranean cuisine. It has a smooth, fruity and elegant profile, with notes of fresh almond, green tomato, grass and apple.
It is ideal used raw, in salads or on the classic Catalan pan con tomate. At Finca Hostalets we grow Arbequina in our own olive groves in Priorat — estate-grown, fully traceable, verifiable origin.
That peppery sting in the throat is a sign of quality, not a defect. It comes from polyphenols — natural antioxidant compounds found in olives.
Our EVOO contains 292 mg/kg of total polyphenols, a very high value that indicates a fresh, well-made oil.
Pour a small amount into a small glass. Warm it slightly in the palm of your hand to release the aromas. Bring it to your nose and notice its nuances — grass, almond, green fruit.
Then take a small sip and spread it around your mouth. A good EVOO should show a balance of fruitiness, bitterness and pungency. All three are positive signs, not defects.
Arbequina pairs especially well with salads, grilled vegetables, fish, mild cheeses, carpaccios and pan con tomate.
Its gentle aromatic profile enhances ingredients without overpowering them — making it the ideal finishing oil.
Storage
Olive oil has three enemies: light, heat and air. To keep it at its best, store it in a cool, dark, dry place, always tightly closed.
Avoid keeping it next to the hob or anywhere with sudden temperature changes. A pantry or dark cupboard is the ideal place.
Olive oil does not go off like other foods, but it does lose its properties over time. It is generally recommended to use it within 18–24 months of harvest.
Our bottles always show the harvest date — so you know exactly when the oil you are enjoying was born.
Once opened, olive oil keeps for several months if it is tightly closed and protected from light and heat.
To enjoy its full aroma and flavour, we recommend using it within 3–6 months of opening.
There is no need. The ideal storage temperature is between 14 and 18 °C. A kitchen cupboard away from heat is enough.
