Harvest time is the most crucial moment of the year: the instant when the fruit expresses everything the land, the climate, and careful cultivation have built up over months. At HOSTALETS 1898, harvesting is not seen as an industrial process, but as a craft. A precise, attentive, and deeply respectful gesture towards the olive tree.

We work with artisanal harvesting in small batches, picking only when the Arbequina olives reach their optimal ripeness: that perfect balance between aromatic freshness, vegetal intensity, and natural stability. We are not guided by haste or the calendar; we are guided by the tree.

Hand-selected: every fruit matters

Hand-harvesting allows for the selection of only healthy, firm, and perfectly formed olives. This meticulous selection ensures that no damaged fruit enters the process, preserving the purity of the oil from the very beginning.

The artisanal process avoids impacts, pressure, or temperatures that could alter the sensory profile. The result is an extra virgin olive oil that retains its aromatic identity intact, a true expression of Montsant, its climate, and its stony soil.

The value of immediacy: same-day milling

Once harvested, the olives are transported in ventilated crates to the mill in a continuous and controlled process. Each batch is milled on the same day, always cold, to prevent oxidation and preserve:
