Our way of working

At Finca Hostalets 1898 we see olive oil as a work built on attention and respect. Every gesture, from pruning to picking, answers one clear intention: to accompany the olive tree so it can express the very best of itself.

We protect a natural process that calls for observation, calm and precision. Working this way is a form of goldsmithing.

The territory

Our own groves in the Serra de Montsant Natural Park. Limestone soils, dry farming and a Mediterranean climate of contrasts that give character to every harvest.

The craft

Artisan harvest by hand. Picking only when the Arbequina reaches its optimal point. Cold milling the same day to preserve freshness and aromas.

01 The territory

A landscape beyond words. It is felt.

The Priorat is a land of steep mountains, mineral soils and slopes shaped by generations who learned to listen to the earth before working it.

In the Serra de Montsant, where our own groves grow, stony and shallow soils lead the olive tree to drive its roots deep. From that austerity comes the aromatic concentration that defines our extra virgin olive oil.

An olive oil born here speaks of its variety and its method, and above all of its place: the light, the wind and the singularity of its land.

Every harvest is an exercise in listening. We observe the tree, the climate, the fruit. We pick only when the olive reaches the exact moment.

02 The olive grower

A gaze that interprets the landscape.

José's work rests on his ability to read what the estate shows him. His days are spent anticipating how the tree will respond to the weather, when the soil needs air, and when the olive reaches its most expressive point.

His presence in the grove is constant, quiet and decisive. He knows how each plot behaves and adjusts his care with the delicacy of someone who understands that great olive oil is born of small decisions taken at the precise moment.

Everything is considered. Each season is a new dialogue with the land.

03 The variety

Arbequina. Small, delicate, expressive.

Montsant-Priorat Arbequina develops a particularly fine and balanced expression. In the dry-farmed slopes of the sierra, its slow growth and low yield per tree translate into greater aromatic concentration and a silkier texture.

Its colour, evolving from deep green to a soft toasted hue, marks the exact moment we choose to pick: clean aromas, fine green notes and a serene fruitiness.

A small fruit with extraordinary character.
