Hand-selected

Only healthy, firm and perfectly formed olives. Hand picking ensures that no damaged fruit enters the process, right from the very first step.

The exact moment

We harvest only when the Arbequina reaches its optimal balance: aromatic freshness, green intensity and natural stability in perfect proportion.

Cold pressing

Each batch is milled on the day it is harvested, always cold. No delays, no oxidation. The aromatic identity of the Montsant, intact.

The gesture

Every fruit matters.

Hand picking allows us to choose only healthy, firm and perfectly formed olives. This meticulous selection ensures that no damaged fruit enters the process, preserving the purity of the oil from the very first step.

Careful handling avoids knocks, pressure or temperatures that could alter the sensory profile. The result is an EVOO that keeps its aromatic identity intact: a faithful expression of the Montsant, its climate and its stony soil.

Immediacy

Milled the same day.

Once picked, the olives are carried in ventilated crates and taken to the mill in a continuous, controlled process. Each batch is milled the same day, always cold, to preserve:

  • the polyphenols
  • the aromatic freshness
  • the natural stability of the oil
  • the sensory elegance that sets our EVOOs apart

It is a method that demands organisation, precision and absolute commitment. But it is also the only way to obtain an oil that is truly alive and honest.
