CLIMATE

Mediterranean, mild winters and very hot summers.

HARVEST

Usually from mid-October, depending on the maturity which has to be optimum, when the olive’s skin and inside starts to be pigmented with an orange/red colour.

The olives are handpicked with a technic named “al vuelo” which means caught on the fly and the fruits are picked from the tree in very precise order starting from the top of the branch. 

The Olives then gently fly on the burlap nets. This ancestral technic is the best to preserve the fruits’ properties and that is why we use this traditional way.

TRANSFORMATION

The process used is a mechanical extraction with two-side mill at very low temperature (less than 27°C) in order to preserve all the flavour and the natural antioxidants: polyphenol, tocopherol, etc

BEST BEFORE

To enjoy all the flavour and the antioxidants, we recommend our clients to consume the oil the year of its harvest. (See the back of the bottle “cosecha 20XX”).

TASTING

Fruity and green with tomatoes and tangy apple range of smell as well as a delicate inch of fresh picked almonds.

Fresh taste in mouth ending with a non-astringent sour touch.

Fine and elegant, the oil gently awaken olfactory sense, while offering a unique experience with its lingering aftertaste.

QUALITY CERTIFICATION

The only Extra Virgin Olive Oil we bottle is the one we produce organically and our harvests are certified by the Panel de Cata (Spanish PGI in Catalonia), this is quality of taste certification.

In homage to this very special olive we elaborate organic Extra Virgin Olive Oil, where strength of character and illusion combine tastefully.

We see in our organic Extra Virgin Olive Oil the perfect reflection of our ancestral values of love for Spanish authentic terroir and excellence.

  • EL AOVE es el zumo natural oleoso obtenido de olivas sanas, mediante procedimientos mecánicos. Es una alimento muy nutritivo y saludable para nuestro organismo. 
  • ORIGEN: Parque Natural de la Sierra del Montsant-Priorat, Cabaces (Tarragona) España. 
  • DOP: Denominación de Origen Siurana

  • COSECHA 2020: Manual, 1ª quincena de octubre. Indice de madurez: 1-2, envero. Cuando el color de la oliva cambia de pigmentación evolucionando de verde a amarillo en la "piel" epicarpio, y la pulpa "mesocarpio" es de color blanco. Máxima concentración de Acido Oleico, maslinico, vitamina E, antioxidantes, polifenoles, tocoferoles, etc.
  • ELABORACIÓN: Molino de dos fases, Decantación y filtrado antes de bodega.
  • BODEGA: Humedad y temperatura controlada.
  • ENVASADO: Sobre pedido 
  • CATA: Frutado verde con notas vegetales a tomatera, alcachofa, hinojo, plátano, nuez y almendra verde en nariz que se vuelve mas complejo en boca con los sabores de las frutas recién recolectadas. Fresco paso por boca sin sensación de astringencia y leve retrogusto picante. Destaca su finura y elegancia en nariz y su opulencia en boca que le otorgan un personalidad única.
  • MARIDAJE: Siempre en crudo, como acompañamiento de ensaladas, verduras, carnes y pescados.  Ideal para combinar en postres, bizcochos y helados.
  • CONSERVACIÓN: Conservar en ambiente fresco y seco, alejado de la luz y los cambios bruscos de temperatura.
