EVOO stands for Extra Virgin Olive Oil: the natural juice of the olive, obtained by mechanical means only, unrefined and free of any flavour defect. It is the highest category of olive oil. Yet very different oils share that same name, and knowing how to tell them apart is what turns an ordinary purchase into a good choice.
In a few words
- EVOO: olive juice, mechanical extraction only, maximum acidity of 0.8% and zero defects at tasting.
- Acidity cannot be tasted: it reflects the condition of the olive. The lower it is, the more careful the production.
- Pungency and bitterness are not defects: they reveal polyphenols, the oil's natural antioxidants.
- A good EVOO shows its origin, variety and harvest date on the label.
- An early harvest and cold extraction concentrate more aroma and more polyphenols.
What EVOO is and what the regulations require
Extra virgin olive oil is the only oil eaten exactly as it comes from the fruit. The olive is washed, crushed, malaxed and the oil is separated. Nothing more. To carry the name extra virgin, European regulations and the International Olive Council set three conditions:
- 01It must come only from olives and be obtained solely by mechanical processes, with no solvents or refining.
- 02It must have free acidity of 0.8% or less.
- 03It must pass an official tasting: a panel of experts must confirm it is fruity and has no defects, such as rancid, winey or musty notes.

How an authentic EVOO is made
The laboratory only confirms what has already been decided in the grove. A great extra virgin olive oil depends on four moments:
- 01The condition of the olive: healthy fruit, with no knocks or wounds.
- 02The timing of the harvest: picking before full ripeness gives fresher, more aromatic oils.
- 03Speed: the fewer hours between tree and mill, the less the fruit oxidises.
- 04Temperature: below 27 °C, aromas and antioxidants are preserved.
At Finca Hostalets the harvest begins in the first half of October, when the Arbequina reaches veraison. We pick by hand and mill the same day. We explain it step by step in our hand harvest.
Acidity, explained without jargon
It is the most quoted figure and the least understood. Acidity has nothing to do with a sour taste. It is a chemical analysis that measures free fatty acids, in other words how much the olive had begun to break down before becoming oil.
The law allows up to 0.8% in an extra virgin oil. A carefully made EVOO stays far below that: ours is around 0.12%. Low acidity means healthy fruit, gentle picking and fast milling.
Polyphenols: why a good EVOO is pungent and bitter
If you notice a slight bitterness and a peppery sting in your throat when you taste an oil, you are tasting a fresh oil. Those sensations come from polyphenols, the olive's natural antioxidants. One of them, oleocanthal, is directly responsible for the sting.
High-polyphenol olive oils have become a global trend, and for good reason: they are the most studied part of EVOO. Their concentration depends above all on an early harvest. We cover it in EVOO and longevity.
An EVOO is not measured by what it lacks, but by what it keeps: the aroma, the freshness and the character of the place where it was born.
What cold extraction means
It is obtaining the oil below 27 °C. Working cold lowers the yield, because less oil comes from each kilo of olives, but it protects aromas and polyphenols. It is a decision about quality, not volume.
What EVOO brings to your diet
Extra virgin olive oil is the foundation of the Mediterranean diet. Its composition sets it apart from other vegetable fats:
- Oleic acid, a monounsaturated fat associated with a healthy cardiovascular profile.
- Vitamin E, a natural antioxidant.
- Polyphenols, such as hydroxytyrosol and oleocanthal, the most studied compounds in EVOO.

How to tell if an extra virgin olive oil is good
You don't need to be a taster. Before you open the bottle you can already recognise a good oil:

Arbequina: smoothness and balance
Arbequina is a small olive native to Catalonia. It gives oils with a sweet entry, gentle bitterness and light pungency, with notes of green almond, tomato leaf and apple. On the limestone, dry-farmed soils of the Montsant the tree grows slowly and yields little, and what it yields is intense. It is a variety made for using raw: bread with tomato, salads, fish or vegetables.

What does EVOO mean?
EVOO stands for Extra Virgin Olive Oil, the highest quality category of olive oil. It is olive juice obtained solely by mechanical processes, with a maximum acidity of 0.8% and no sensory defects.
What is the ideal acidity of an extra virgin olive oil?
The law sets a maximum of 0.8%. High-quality EVOOs are usually well below that, between 0.1% and 0.3%. Acidity cannot be tasted: it reflects the condition of the olive when it became oil.
Why do some olive oils sting the throat?
Because of polyphenols, especially oleocanthal. Pungency and slight bitterness are signs of a fresh, early-harvest oil rich in natural antioxidants.
What is an early harvest olive oil?
One made from olives picked at the start of the season, still green or at veraison. It yields less oil per kilo, but offers more aroma, freshness and polyphenols.
How can I tell if an olive oil is good?
Check that it is extra virgin, that it shows the harvest date, origin and variety, that it carries official seals and comes in dark glass. When tasted, it should smell of fresh fruit, never rancid or musty.
Does extra virgin olive oil expire?
It does not spoil overnight, but it loses aroma and antioxidants over time. Ideally, use it within 18–24 months of harvest and, once opened, within a few months.
Can I cook and fry with EVOO?
Yes. Thanks to its oleic acid and antioxidants it is stable at home cooking temperatures. Even so, the most aromatic oils shine brightest raw, to finish a dish.
How should I store extra virgin olive oil?
In a cool place, between 14 and 18 °C, dark and tightly closed. It does not need refrigerating. Avoid keeping it next to the hob or in the light.
