What is terroir and how does it transform the flavor of our extra virgin olive oil? 🌿
The Terroir: The Soul of Our EVOO
Priorat: A unique landscape among mountains
In northeastern Catalonia, the Priorat region unfolds a landscape of contrasts. The Serra del Montsant Natural Park, with its imposing limestone formations, dry-stone terraces, and poor but mineral-rich soils, holds the secret to a unique extra virgin olive oil. The altitude and steep slopes not only challenge agriculture but also contribute to the authenticity of each harvest.
The soil, a mixture of slate and limestone, imparts a distinctive character to the crops, while the Mediterranean climate, marked by mild winters, warm summers, and cool breezes, adds balance and complexity. Every element of this ecosystem seems to come together to create an extra virgin olive oil that speaks of the land where it was born.

The strength of the land and the authentic flavor
The essence of the terroir is perceived in every drop. The combination of mineral soil and the wind that caresses the slopes imparts subtle and exceptional nuances. Native flora, such as rosemary, thyme, and juniper, permeates the surroundings with deep and delicate aromas, leaving their mark on the crops.
The influence of the land goes beyond aromas. The minerality of the limestone is reflected in fresh and balanced notes, while the low humidity and exposure to the sun intensify the natural flavors, transforming each harvest into an authentic expression of Priorat.

The power of biodiversity
The Serra del Montsant Natural Park is also home to a diverse array of wildlife. In the skies, majestic birds of prey such as the golden eagle and Bonelli's eagle dominate the landscape, while mammals like the capybara, fox, and wild boar move discreetly across the slopes and through the forests. The presence of these species is not only a symbol of the region's natural wealth but also a guarantee of a balanced and healthy ecosystem.
This biodiversity contributes to the quality of the crops, creating an environment where pollinating insects and native plants maintain a natural cycle without interference. Wild aromas and the essences of Mediterranean flora are subtly and intricately integrated, contributing unique and profound notes.
The earth's imprint in every drop
Respectful and patient mountain farming follows the rhythm set by nature. The dry-stone borders that define the fields not only speak of tradition but also safeguard the soil and biodiversity. The mineral character of the land, combined with the fresh climate and wild aromas, is perceived in an extra virgin olive oil that captures the essence of a unique environment.
